Meal planning!!!

Have been doing some meal planning lately.......I am a notorious sweet lover and my friends are amazed at my ability to devour sweets and eat junk.. So now I am being a good girl. Here are some carefully planned meals that I consumed.
Prawns in tangy tamarind sauce and mustard seeds and kadipatta, frozen banana-peanut butter- cocoa ice cream and palak paneer and baigun bhaja.

tired?? sleepy??? after eating??

I had a hearty breakfast of Spanish omelette and two toasts with butter in the morning!!! but by the time i took a bath.....I was feeling sleepy and tired. Wanted to skip office and just crawl into bed and sleep. This has been a sort of pattern with me......if i eat bread or any form of wheat. This has made me wonder if i am Gluten insensitive. Gluten is a protein found in Wheat, Rye and Barley.
This doubt was compounded by the fact that i read that it will be easier to find out if you are gluten sensitive or not, thanks to a new test developed by Indian scientists.
Anyway, I have decided to try my own as less gluten as i from now on....its rice instead of roti.
Lets see if this works!!! will keep updating in this space!!!

Look what google doodle taught me today!!!

So Google Doodle said "Thank you Dr Salk"....children were holding up these signs....made me I clicked on it.....And I learnt something new today!!!! Dr Salk was the guy who gave us polio vaccine...and he famously said that the vaccine would not be patented by saying..."Can you patent the sun".
This takes me back to an old post of mine Create awareness against patents too Angelina!!!

French crepes for breakkie!!!!

So today I felt like having something different from the usual breakfast of eggs! My friend Priyanka gave me oats atta the other day as she thought oats is not suiting her. Well, I decided to make some crepes out of it. Crepes are thin French pancakes, somewhat like our dosas but made of maida originally. I substituted maida with oats for a gluten free version. 
Well to be honest, i did put in one heaped table spoon of maida only coz I like the taste of maida, but if you want gluten free, maida free crepes, by all means go ahead and do it. 
I took almost one cup of oats atta and topped it off with a heaped spoon of maida. Then I added one teaspoon of baking powder and a pinch of salt. 
In a separate bowl I mixed one egg with one cup of milk. 
Then I mixed the dry and wet ingredients and put a small spoon of melted butter(optional) to make a smooth and runny batter. This batter is much thinner than cake batter. 
I greased a hot pan with olive oil and added one big ladle of the batter and picked up the pan and swirled the batter around to get a round omelette like shape. 
On medium heat it got cooked and then I flipped it to cook on the other side. 
Once done I flipped it back and put the heat on low and put some sautéed mushrooms and grated cheese before I folded it over just like a stuffed omelette. 
You can use any stuffing you like.....mushrooms, sautéed spinach, plain cheese or even anything sweet like bananas(top that with honey)
Once done serve them hot and eat them without delay!!!

Oats are healthy and high on fibre and the vegetables give you an added boost of fibre and vitamins.

The Bling - Bling of food labels!!!

So I went shopping this weekend!!! Let’s just accept it…some things can never be changed!!! And one of those things is “Anjilee Istwal like sweets”….thus, the only solution to such a malady is to buy something that does not do major damage to your waistline and somehow manages to be classified healthy too….. :)))) Well, I know how to do it.

The solution is simple but expensive….but I think investing a little bit in your health is always worth it…..well spend a little bit now…or spend later on a bigger size jeans and a whole new wardrobe!!! I would rather spend now.

Anyway I went to a famous health store and bought myself some goodies! Now why I am writing all this is because I want you to understand the importance of reading labels on food stuff carefully while buying food. What you may think is healthy may just be all bling bling!!!
  •  Look out for terms like “partially hydrogenated oil," "hydrogenated vegetable oil," or "shortening" on the ingredients list…this means that this stuff contains trans fats, no matter what the label says
  •  Stay clear of sweet nothings… stuff that contains brown rice syrup, barley malt, caramel, fructose, fruit juice concentrate, and anything involving corn syrup….instead of the commonly known term sugar.
  • Check carefully what is the nutritional value and what serving size is exactly the food stuff talking about when you buy it……don’t think the entire box has just 100 calories while the small print may say its 100 calories per serving size. Check the label for what they mean by serving size….it might just be a tablespoon….OMG!!!!
  •  Check the foot note…..if there is an asterisk  (*) in front of anything….scan the bottom of the label for what it says

Hope you don’t get too confused by all this….but believe me…once you crack this….you will be a super shopper!!!!

Crazy psycho baker!!!!

Wheeeeeeee!!!!! I had muffins today! Ok ok….I agree they were not really the same soft, moist, to die for stuff that you buy from famous bakeries or pretentious stand-alone bakers, but they were sweet and muffiny! That’s all I care about!
The truth is I baked them myself……I tried my hand at a no flour, no sugar, whey protein recipe that I developed after reading multiple recipes on net.
So what’s my take away from this attempt apart from the fact that I will do anything to satisfy my sweet cravings???? Here….I am listing my wisdom down for ya all!!
-          Even if you are not using refined flour (maida) or whole wheat flour (aata)…. You still need some sort of flour……so options are chick pea flour or Besan or desiccated dry coconut.
-          You need some sort of moist ingredient that stops the muffins from being dry and cardboard… mashed banana or paneer
-          Don’t you dare overcook

Anyway…….here is my recipe…..
Just take two eggs…..beat them…..beat in sugar substitute of your choice and then beat in some butter or olive oil (half cup). Now add mashed banana or about 100 gms of soft cottage cheese (paneer) completely mashed.
Beat them together and the4n mix the dry ingredient same ratio as normal cake…..i used one big cup for these two eggs….and my dry mix had 2 scoops whey protein powder, two tablespoon dry coconut, 4 tablespoons Besan, half teaspoon baking powder and a pinch of salt.  If you have cocoa powder put two heaped tablespoons in the mix.
Fold in the dry mix in the egg mix… case it starts getting too dry and clumpy add a bit of warm milk.
Once the batter is smooth and well mixed pour it into a greased muffin tray or a cake tin to make a full cake.
Bake at 180 degree Celsius for not more than 25 to 30 mins….and check after 20mins if the fork inserted comes out clean or sticky…if sticky…bake a bit more otherwise just stop.
Here is a picture of my batch…..that I intend to eat with my soy milk and chia seeds pudding to make it a bit more moist and gooey!!!!:))))))

Killing the sweet craving with a healthy bite!!!

It's really hard to eat healthy and stay away from junk and sweets in the first few days of your "changing my lifestyle" attempt.
Well! Hurdles keep coming up in the shape of chocolate donuts ordered by a friend or kaju katli being distributed in office coz a colleague won an award!!!! Why oh why does it have to be so difficult.
So today I decided to satisfy my own sweet craving before going to work.
I made myself blueberry protein pancakes!!! Yup, they don't have even a single grain of flour!!! The evil carb!!
Try it!
I used two eggs with a scoop of whey protein and a table spoon of dry desiccated coconut. After mixing them well I added some dried blue berries! Mashed ripe bananas would have been good but I didn't have any. After that just a touch of honey or sweetener and then pour a ladle full on greased non stick pan!
Voila!!!! You have pancakes in a jiffy!

Today I will not eat any sweets!! And if I do feel like it! I have my extra pancake rolled up in my lunch box :))))

Gawwwwd!!!!! I am LAZYYY!! The fact that I haven’t written a word in last ‘god only knows how many’ months…proves it. Anyway…I am ready for redemption. I shalt not give in to sloth and gluttony ( I am sure I just broke some cardinal rule of English language)

Why I am swearing off all of my favourite sins is that I have decided to lose some weight.  Being on the wrong side of thirty can wreak your metabolism and all the things that never made you fat suddenly become your nemesis.

So there I go again!! But this time not only am I trying to live healthy but also motivating myself to document it. Hopefully it will help me in keeping myself from falling off the wagon….if nothing else… here we go!!!
